Moving, everything everywhere, going back to work, see all my friends, starting school,... but even though I get some time to cook. What I don't do that often is to publish it hehehe.

So as I said I gotta keep it up with the blog and try not to be lazy. The other day I was in Antwerp, walking around in an area I'm not re"ally familiar with I found a really nice butcher's with high quality products, in between all the nice pieces I got a pair of tournedos. The moment I came out of the shop I started getting ideas to how to combine this pieces with a nice sauce, it was like a miracle cause right next to it I found a cheese shop, cheeeeeese shop!!! ( for those of you who know me, you already know how was my face) so I didn't hesitate nomore and went inside. Completely lost I found myself in between so many cheeses, but I ended up buying a piece of moelleux du Revard, not really soft but niether really strong, perfect match for the perfect tournedos. On my way home I also found a small shop where I could buy some greens to dress up the dish. It was a tough job to cook while searching for all the cookware, but I gotta say it ended up pretty well with a nice white wine.

TOURNEDOS CON MOELLEUX DU REVARD

2 piezas de tournedos / pieces of tournedos.
150 gr de moelleux du Revard.
250 ml de nata / cream.
1 brocoli / broccoli.
2 cebollas / onions.
1 paquete de tomates cherry / cherry tomato.
Mini esparragos / asparagus.

° We will start by boiling the broccoli but not too long, we want it al dente. Chop the onions and tomatoes, put first the onions in the pan until poached and then add the tomatoes.
° Once the vegetables are ready is time to season and just sear the tournedos in the pan. at the same time in another pot we will put the cream, salt and pepper, let it take a bit of temperature and than low the fire while adding the cheese and let it melt.
° To finish the meat we will let it cook softly and painting it with the sauce in the pan to do not let it dry out.
° Last but not least, give all the vegetables a turn in the pan and let's go plate it.

Good morning,

Here we go with the first post! It's been a pretty intense week but even though I've managed myself to spend some time in the kitchen. To end up a crazy week I decided to throw a birthday party for my godmother, just another reason to gather everybody and spend some quality time, cause that's how we do it Ambrona style and it gave me the oportunity to try out some new recepies.

1 huevo y 1 yema / egg and yolk
Aroma y mermelada de naranja amarga / bitter orange essence and jam
3 cucharadas soperas de azúcar glas / table spoons of coaster lugar

• We start by melting the chocolate on a bain-bain-marie, meanwhile we sift all the dry ingredients ( flour, sugar, cocoa and salt) and we add the butter in pieces to change the dry powder mixture into a humid sand.
• After that se add the melted chocolate, the egg, the yolk, the jam and the essence, and we mix it until we get a dough with a nice consistency. Then se roll it in a plastic film and we put it in the freezer for at least 12 hours. The cookies have to be baked for around 6 min in the oven preheated at 180°.

Tarta de chocolate blanco y arándanos / White chocolate cake with cranberries.

4 huevos / eggs
200 gr de harina / baking flour
200 gr de azúcar / sugar
150 gr de mantequilla sin sal / unsalted butter.
150 gr de chocolate blanco / white chocolate.
Para el relleno / for the filling:
mermelada de arándanos / cranberry jam.
200 gr de mantequilla / butter.
75 gr de chocolate blanco / white chocolate.
175 gr de azúcar glas / coaster sugar.
Frutos rojos para decorar / mix of berries to decorar.

• We mix together the sugar and the eggs until they whiten and double their volume. In the microwave we melt the chocolate and the butter, we will wait until they cool off to add it to the mixture. After that se sift the flour on top and softly mix everything together.
• In two separate moulds divide the mixture and bake it for 25 min at 180°. Ley them cool off on a rack and after that we remover them from their moulds.
• To prepare the buttercream we mix the butter for about 5 min, we melt the chocolate in the microwave and let it cool before adding it to the butter. When it is mixed we add slowly the sugar and mix everything well.
• To assemble the cake we start by mixing some jam and a bit of water to make a siroop and soak both cakes. We set one of them and put buttercream and jam on top, after we layer down the other cake and more buttercream on top and decorar it with a mix of berries.

Bizcocho de limón / Lemon sponge :

Sirope /syrup:
• 150 gr de azúcar / sugar.
• 100 ml de agua / water.
• 50 ml de zumo de limón / lemon juice.
• Frutos rojos / mix of berries.

• Sift all the dry ingredients ( 100 gr flour, baking powder, sugar and salt). On a pan melt the butter and milk, let it cool and add the dry ingredients.
• Add the eggs one by one, 100 gr of flour and the lemon zest. Mix it well and add the rest of the flour.
• Cover the mixture with a wet cloth and let it raise for about 45 min in a warm placer.
• For the syrup, make a white caramel heating up the sugar and water for about 10 min. Take it off the fire and add the lemon juice.
• Bake the mixture for 25 min in the oven at 180°, make some holes and soak it with the syrup. After it cools off remove it from the mould and add the rest of the syrup.
